This is one of the first recipes I created from scratch, borne out of a desire for a healthy snack. It started off with a Kale Smoothie:
1 frozen banana
1 cup of coconut water
2-3 tbsp almonds
blended together and to make it a cake, add:
2 tbsp Quinoa flour (or some flax-seed flour…)
+ anything you like or any supplement you want to hide.
I put it into a shallow dish and baked it at 160 degrees for about 30 min or until the cake is firm. It proved very yummy with
coconut Yoghurt on top, toasted berries and slightly warmed frozen organic berry mix, which had these gorgeous tiny forest strawberries in it… they taste heavenly. Enjoy and create your own!
