Sweet Potato Fritters with Smoked Salmon

Ingredients:

Mix:  1 large Sweet Potato, peeled and coarsely grated

2 egg yolk

sea salt and pepper

Fry in: 2 tbsp coconut oil over medium heat, by making about 6 patties

Cook for about 3 min on either side

Transfer to plate, top with smoked salmon (I used smoked trout), avocado, rocket salad, chives… It’s soooo yummy!
