Healthy Recipes: Delicious Home-made Paleo Bread

The inspiration for this yummy home-made bread comes from Pete Evan’s Paleo Kitchen, but I changed it.

Ingredients:

4 tbsp sunflower seeds

4 tbsp pepita/pumpkin seeds (soaked in filtered water overnight)

2 tbsp chia seeds

1 tbsp caraway seeds

50 g almonds (activated: soaked in filtered water overnight)

…all the above ingredients were briefly chopped by the blender, then added to:

150 g almond meal

25 g LSA flour

2 tbsp coconut flour

1 tsp bi-carb soda

6 eggs

70 g extra virgin coconut oil (melted)

50 g walnuts (whole)

1 tbsp raw honey

1 tbsp apple cider vinegar (raw)

1 tsp Himalayan salt

… mix everything into a bowl with a spoon and add it to a 20-cm bread form, sprinkle some of the seeds on top (either out of the above quantity of additonal) and bake in hot oven at 160 degrees for 45 – 50 minutes. I love it!
