1 tbsp grated ginger
2 crushed garlic cloves
2 tbsp plum sauce
1 tsp dried chilli flakes
2 tbsp maple syrup
2 tbsp olive oil
1.5 kg pork spare ribs (2 racks)
cover with glad wrap and keep 1 hour in fridge to marinate.
Preheat oven to 190 degr C
Place marinated ribs on a baking tray (lined with baking paper), leaving some marinade behind
Bake for 30 min in hot oven, then baste with remaining marinade.
Cook another 40 min.
Serve with lemon or lime wedges and coriander leaves.
