My friend Linda made this very healthy alternative of a pancake on the weekend:
2 ripe bananas (broken down, but not entirely mashed)
2 eggs (unless bananas are very small, then one egg)
LSA (Linseed/Sesame/Almond meal) mix – enough to make it a pancake dough (approx. 100 g)
Make pancakes as usual (with coconut oil or butter)
Topping as you love it: strawberries on a bed of plain yoghurt
– or blueberries / maple syrup / raspberries
