Place the following ingredients into a Thermamix or other strong blender:
500 g pitted prunes
150 g cashew nuts (or macadamia nuts)
juice of 1 lemon
80 g pitted dates (or 1/2 tsp stevia/natural sweetener)
After mixing it into a paste, spread it over a sheet of baking paper, stick 150 – 200 g walnuts on top (press into paste) and roll the paper
into a roll, which ends up looking like a ‘salami sized’ roll of about 5 – 8 cm diameter.
Place in fridge and cut into slices of your preferred thickness. Yummy and makes sure that your digestions works like clockwork. Much healthier than biscuits!
